Curried lentils with vegetables
Ingredients
• 10 oz Dry Lentils
• 4 cups water
• 1 1/2 cups chopped carrots
• 1 1/2 cups chopped onions
• 1 teaspoons grated gingerroot
• 1 teaspoons salt
• 1 cups chopped celery
• 1 clove crushed garlic
• 3 teaspoons curry powder
Servings: 6
Method
• Wash lentils and drain.
• In a saucepan, mix together the lentils, water, garlic, curry powder, carrots, onions, celery, ginger and salt. Bring to the boil once and then keep on medium heat.
• Cover and simmer for 30 minutes or till lentils are tender.
• Once ready, serve with bread or rice.
